Heavenly Sweet Potato and Chicken Sheet Pan Recipe

An easy, hearty sheet pan dinner full of chicken and root vegetables.
  • 1.5-2 lbs bone-in dark meat chicken, such as thighs or legs
  • 2 large sweet potatoes
  • 3 large potatoes
  • 1 large sweet onion
  • 2-3 tablespoons olive oil
  • 1 teaspoon ground thyme
  • 1 teaspoon ground black pepper
  • 1 tablespoon parsley flakes
  • salt, to taste
  1. Line a large sheet pan with aluminum foil.
  2. Preheat the oven to 375 degrees.
  3. Peel the sweet and regular potatoes.
  4. Cut the potatoes into 1-1.5 inch cubes. Place on the sheet pan.
  5. Cut the onion up into one inch pieces. Place on the sheet pan.
  6. Drizzle 1-2 tablespoons olive oil on the vegetables.
  7. Using your hands, make sure the vegetables are coated evenly and completely with oil.
  8. Sprinkle half a teaspoon of thyme over the vegetables.
  9. Sprinkle half of a teaspoon of pepper over the vegetables.
  10. Rinse the chicken and pat dry.
  11. Using the remaining tablespoon of olive oil, coat the chicken in oil.
  12. Place the coated chicken pieces on top of the vegetables, skin side up if using thighs.
  13. Sprinkle the remaining thyme and pepper over the chicken.
  14. Sprinkle a small pinch of salt over each piece of chicken.
  15. Sprinkle the parsley over the entire dish.
  16. Put the pan in the oven for an hour and ten minutes to cook.
