The Only Taco Soup Recipe You Need
 
A delicious taco soup served with sour cream, cheese and tortilla chips, made easy by cooking in the crock pot.
Ingredients
  • 1 lb. ground beef

  • 1 large can crushed tomatoes

  • 1 can pinto beans, drained
  • 1 can pinto beans, drained
  • 1 can kidney beans, drained
  • 1 can kidney beans, drained
  • 1 can red chili beans, drained

  • 1 can whole kernel corn, drained
  • 1 can whole kernel corn, drained
  • 1 can Rotel

  • 1 quart V-8

Instructions
  1. Brown the meats in a large skillet.
  2. Remove the meats and drain.
  3. Cook the chopped onion in the leftover fat from the meat until the onion is transparent.
  4. Drain the onion and add to the meat.
  5. Put tomatoes, tomato sauce and Rotel in a large crock pot.
  6. Stir in the ranch dressing mix and taco seasoning. Mix until blended.
  7. Turn the crock pot on high.
  8. Add the meat and onions. Stir again.
  9. Add the drained beans and corn. Stir again.
  10. Carefully add the V-8.
  11. Cook on high for 4-6 hours or on medium for 6-8 hours.
  12. To serve, top with a dollop of sour cream and shredded cheese.
  13. Serve with tortilla chips.
